I don’t know where my days go.  I feel so busy.  All the time.  But doing what?

I’m un-stinking-employed!

I went up on the mountain the other day for a hike with Charley (my pup), and I realized how little time I’ve spent up there compared to last summer.

Last summer I had a 7-5+ job. I went to the gym everyday.  And I would find ways to sneak out of work early (which just means on time in the oil field world) to grab my pup and head up to the mountain.

I was there every week, sometimes several times a week.  But now? Ugh.

It doesn’t help that there use to be this amazing restaurant on the mountain that felt like my little secret.  It had the best breakfast skillets and my friends and I would regularly go for a hike then grab a bite to eat.  We always had the best conversations in there – where people would eavesdrop and put in their two cents.  Lovely stuff.

Side note: a new restaurant has opened up as a replacement, but I haven’t tried it yet. It feels like betrayal.

Anyways.  I got up there this week and it was incredible.  No one was in my favorite place (which is usually crowded in the summer) because I guess people don’t usually hike in the middle of a workday #unemploymentperks.

I brought along a bottle of a new infused water I tried out.  My boyfriend left a million five green apples at my house, and I’m not a green apple fan.  Not even a little.

I pinterest-ed and I googled and I brainstormed to figure out how to not waste these things. I finally stumbled upon the idea of making an infused water!

I love infused water.  I love making it.  I love when hotels have it.  I love drinking it.  Win-win.

In this water I used the mentioned green apples.  One green apple, one lemon, one cucumber and a handful of mint (from my garden) and I made two “batches.”

I like to let water sit and soak in the infusion bath for several hours (or overnight).  I pour the water into a mason jar (running it through a sieve) and add another “batch” of water before retiring the infusion ingredients.  More than two runs and the water starts tasting bitter to me from the lemons.

This was so refreshing.  I really like having “premade” beverages in my fridge that are still a healthy option.  (This summer I’ve made sure to have a mason jar of green tea in the fridge for whenever I want an ice green tea.)
